Orange Chicken

I usually BBQ chicken thighs, but the weather has forced me to come up with another way to cook them, and here it is.

2 packages (about 12 boneless skinless chicken thighs)

Marinade:
1/3 cup chicken broth (or water if you don't have broth on hand)
1/3 cup soy sauce
3-5 cloves garlic, chopped
2 T minced ginger (I found minced ginger in a jar- yipee! It's so much easier)
the zest of one large orange
3-4 drops stevia (optional)
1 bunch green onions, chopped

Mix all marinade ingredients together.

Place chicken in a ziplock bag and add marinade. Refrigerate for 2 hours. I haven't marinated it much longer than 2 hours, because I'm afraid it will be too salty. Place chicken and all marinade into a 9 X13 pyrex baking dish, sprayed with non-stick spray. Bake at 375 for 40 minutes, turning once halfway through.

Serve with vegie lettuce cups.
